“How do you eat so many salads? Don’t you get bored of them?” is a question I get asked quite frequently. The answer is “HECK NO!” There are so many different ways to make a healthy salad and so many different salad recipes I have crafted over the years – let’s just say it never get’s boring. I eat salads for lunch a lot, because I am usually pretty hungry and I can completely stuff my face with salads without feeling any sort of guilt and without feeling insanely full (which I absolutely hate). Side note about me: I hate feeling stuffed to the brim.
So, out of all the salad recipes I have created over the years – this one is a shining star. We all know that a salad should be as colorful as possible in order to get all of the nutrients uniquely available to each individual flavor. I don’t take this fact lightly, I definitely love to taste the rainbow – and it’s ain’t skittles people.

-mixed greens
-cherry tomatoes
-2 figs
-1 mango
-1/2 apple
-2 tbsp pumpkin seeds
-1/2 cucumber
-dressing: 1 tbsp pumpkin seed oil + balsamic + fresh ground pepper
