So, this ice cream recipe was a total accident. I was just trying to make a quick protein smoothie put a little bit extra berries & a little bit less liquid than normal and voilà, this Vegan Berry Protein Ice Cream was born. Don’t you love when that happens? I gave a bite to my boyfriend (yes just one bite…this is MY ice cream) and he said “Mmmm” and I am 100% certain that if I had a child, and also gave him/her a bite they would also have the same reaction.
So, of course I immediately went to my lap top to write this posting for you all!
The cool thing about this recipe is you can definitely have it as I intended to- as a smoothie. You will just need to up the liquid from 1/2 cup to about 3/4 to 1 cup. I actually make this as a smoothie all the time and I often will eat it out of a bowl with a spoon. But, for some reason it never occurred to me to make it EXTRA thick and actually eat it like ice cream instead of smoothie soup.
So, the next time your sweet tooth activates, try making this instead!
(Yes, I am slightly crazy & a bit over excited about this recipe….whatevs)
Ingredients
-1 scoop Sun Warrior Chocolate protein powder
-1 1/4 cup frozen mixed berries
-1/4 cup coconut milk*
-1/4 cup unsweetened almond milk*
-1 tsp spirulina
-1 tsp maca powder
**You might need to add slightly more liquid depending on the power of your blender and how thick you really want your ice cream. Be flexible, you might have to add a little splash more.
Directions
Put all ingredients into the blender & blend. Put into a bowl, top with some shaved coconut and eat with a spoon! Smile & enjoy
