This is a dairy free and gluten free pancake recipe, but there are eggs in here so it’s not vegan.

Dairy-Free & Gluten-Free Pancake Recipe
**Makes 8-10 medium to large pancakes**
-1/2 cup of broccoli
-1/2 to 3/4 cup gluten-free flour
-1/2 medium banana (riper is better)
-1 TBSP chia seeds
-1/4 cup coconut-rice milk (or any other dairy-free milk of choice)
-dash of cinnamon
-dash of vanilla
-1/2 tsp baking soda
-1/2 tsp baking powder
– Toppings: 1 TBSP natural peanut butter, fresh berries, goji berries, dash of cinnamon
-coconut oil to grease pan
Steam the apples & broccoli until they become tender. Put all ingredients into a blender and blend until it’s of batter-like consistency. Start with 1/2 cup of the gluten-free flour and then add more if you feel like you need it to be a little bit thicker. Cook on a greased pan with coconut oil on medium heat. It should only take 1-3 minutes on each side to cook.
