Banana Chia Vegan Muffin Ingredients
- 1 ripe banana smashed
- 1 1/2 cup almond meal
- 1/2 cup granulated stevia
- 2 Tbsp chia seeds
- 1 tbsp almond butter
- 1/4 cup water
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp granulated vanilla bean
- 1/2 tsp salt
Directions
- Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius)
- Put chia seeds and water into a bowl and let it sit while you mix the rest of the ingredients.
- Smash banana in a medium sized bowl with a fork. Add all dry ingredients & almond butter.
- Add chia seed & water mixture.
- Mix completely with a fork. Feel free to add a bit of extra water if the batter is too dry.
- Fill 10 muffin tins equally with batter.
- Bake for 22-25 minutes.
