The EASIEST Baked Pumpkin & Chickpea Recipe EVER

Okay guys, seriously! This baked pumpkin recipe is so easy, you don’t even have to know how to cook to make it. I promise! I was so lazy last night I didn’t even want to spent more than 3 minutes prepping. Well, I guess I wasn’t lazy – I was frustrated.

I was frustrated because my trainer got my appointment mixed up and so I had to skip my personal training session. Yes, I have a trainer 2-4x per month. He’s awesome and he really kicks my butt! I need it every now and then.

So after walking home from the fitness studio, I decided I would do a Runtastic Results bodyweight workout in the living room while my food was cooking and then eat immediately after. And, of course, I had no desire to be creative in the kitchen because I just wanted to get my workout done!

So I mixed all the veggies that I had on a pan, which included: pumpkin, green bell pepper, onion, zucchini and fresh dill. Then, I put 1 cup of garbanzo beans on top and topped it with the all-time favorite Mrs. Dash.

Mmmmm….double mmmm!

What’s more? It’s vegan, gluten-free and dairy-free…win for all!

Even my coworker messaged me the next day saying she made the same thing (after she saw my posts on Snapchat). Yes, if I do say so myself, it was a real winner. Plus, I washed it down with one of my Banana Chia Vegan Muffins for dessert. The evening turned into a REAL WIN!

Baked Pumpkin & Chickpea Recipe

Ingredients (makes 2 servings):

  • 2 cups cubed pumpkin
  • 1 diced green bell pepper
  • 1 diced red onion
  • 1 chopped green zucchini
  • 2 tsp coconut oil
  • 1 cup garbanzo beans
  • fresh dill
  • Mrs. Dash garlic & herb seasoning (or any of your favorite seasonings)

Directions:

  • Chop up all the veggies and the pumpkin and lay them on a pan (parchment paper optional, this pan was just a bit dirty).
  • Use your hands to rub 2 tsp of coconut oil all over the veggies.
  • Top with 1 cup of garbanzo beans (wash them first if they are canned)
  • Sprinkle Mrs. Dash all over!
  • Bake at 350 degrees for 20-25 minutes!

Sorry I didn’t plate it up and make it sexy for you. I am being real – it was that kind of night. I mean, let’s just say it was a “real dinner.” But it’s fun to spice it up and give it some good lighting every now and then…but not this time!
