If I had to eat one food for the rest of my life, I am pretty sure that I would choose these EXTRA FLUFFY Blueberry Stuffed Protein Pancakes. For real, friends…they’re SO good and insanely easy to make. If there was a tinder for breakfast foods, you would TOTALLY swipe right on these babies 😉 MATCH!
It’s a weekend tradition in our house to make protein pancakes for breakfast and I MUST say that today’s pancakes were probably the best I have ever made and super duper fluffy. I like to tweak with my pancake recipe here and there – and this weekend I totally nailed!
Extra FLUFFY Blueberry Stuffed Protein Pancake Recipe
Makes 10 medium pancakes
One serving = 3-4 pancakes
Ingredients:
- 3 bananas
- 5 eggs
- 2 Tbsp coconut flour
- 2 Tbsp chia seeds
- organic blueberries
Process:
Put all the ingredients in a blender and blend it up until the batter is completely mixed. Grease the pan with coconut oil and cook on med-high heat for approx 2-3 minutes each side (until brown-ish). To get the blueberries inside, pour the batter on the pan and then wait about 30 seconds…then put a handful of blueberries on the uncooked side of the pancake (distribute evenly). Wait until one side is finished and then flip (blueberry side down) and cook for the remaining time. Top with berries, honey, almond butter, cinnamon…whatever you want!
